I don't use OS X so I can't offer any suggestions here...

... but I can speak to the state of Tarsnap at least.  In the current release,
resource forks definitely don't work, but extended attributes should work at
least to the extent that they're covered by file flags or posix1e.  More
complete support will come once I update Tarsnap to use a newer version of
libarchive, but that's currently not my top priority.
