Having a monthly fill to a set amount X makes the most sense to me.
It'd allow me to set my own buffer and i'd be able to see any change
in the rates, thus i'd be able to detect any problems before they
become too big. I also don't run the risk of getting a large withdraw
from my account if something went really wrong.

For us, a monthly autopay bill with a monthly usage cap we can set ourselves would work well. Notification that we are approaching our cap would allow us to investigate increased/unusual usage.
